Ingredients:  

Main Ingredients

  • 4 cups Potatoes, diced
  • 1 cup Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tbsp Gochujang (Korean chili paste)
  • 4 cups Vegetable broth
  • 1 tbsp Soy sauce
  • 1 tsp Sesame oil
  • 2 cups Spinach
  • 2 stalks Green onions, chopped

Instructions: 

  • 1. Heat sesame oil in a large pot over medium heat.
  • 2. Add onions and garlic, sauté until fragrant.
  • 3. Stir in gochujang and soy sauce, cook for another minute.
  • 4. Add potatoes and vegetable broth, bring to a boil.
  • 5. Reduce heat and simmer for 30 minutes, or until potatoes are tender.
  • 6. Add spinach and green onions, cook for another 5 minutes.
  • 7. Serve hot and enjoy!

Notes:

This stew is great for a cold day. Adjust the spice level by adding more or less gochujang.
