Ingredients:  

Main Ingredients

  • 1 block Tofu firm, drained and cubed
  • 2 tbsp Vegetable Oil
  • 1 cup Onion chopped
  • 2 cloves Garlic minced
  • 1 cup Bell Pepper chopped
  • 1 cup Tomato chopped
  • 2 tbsp Soy Sauce
  • 1 tsp Thyme dried
  • 1 cup Vegetable Broth
  • 1 tsp Paprika
  • to taste Salt and Pepper

Instructions: 

  • 1. Heat the vegetable oil in a large skillet over medium heat.
  • 2. Add the cubed tofu and cook until golden brown on all sides. Remove and set aside.
  • 3. In the same skillet, add the onion, garlic, and bell pepper. Cook until softened.
  • 4. Add the chopped tomato, soy sauce, thyme, vegetable broth, and paprika. Stir well.
  • 5. Return the tofu to the skillet. Simmer for 15-20 minutes until the sauce thickens.
  • 6. Season with salt and pepper to taste. Serve hot.

Notes:

Great served with rice or steamed vegetables.
