Pork shoulder
cut into chunks

Olive oil

Onion
diced

Garlic

Chicken broth

Carrots
sliced

Potatoes

Thyme
dried

Rosemary
dried
to taste
Salt and pepper
Instructions:
1. Heat olive oil in a Dutch oven over medium-high heat.
2. Add pork chunks and brown on all sides. Remove and set aside.
3. In the same pot, add onions and garlic. Sauté until softened.
4. Return pork to the pot. Add chicken broth, carrots, potatoes, thyme, and rosemary.
5. Bring to a boil, then reduce heat to low. Cover and simmer for 2 hours.
6. Season with salt and pepper to taste. Serve hot.
Notes:
For a thicker stew, you can add a slurry of cornstarch and water during the last 10 minutes of cooking.
