Ingredients:  

Main Ingredients

  • 2 lbs Pork shoulder cut into chunks
  • 2 tbsp Olive oil
  • 1 large Onion diced
  • 3 cloves Garlic minced
  • 4 cups Chicken broth
  • 2 cups Carrots sliced
  • 2 cups Potatoes diced
  • 1 tsp Thyme dried
  • 1 tsp Rosemary dried
  • to taste Salt and pepper

Instructions: 

  • 1. Heat olive oil in a Dutch oven over medium-high heat.
  • 2. Add pork chunks and brown on all sides. Remove and set aside.
  • 3. In the same pot, add onions and garlic. Sauté until softened.
  • 4. Return pork to the pot. Add chicken broth, carrots, potatoes, thyme, and rosemary.
  • 5. Bring to a boil, then reduce heat to low. Cover and simmer for 2 hours.
  • 6. Season with salt and pepper to taste. Serve hot.

Notes:

For a thicker stew, you can add a slurry of cornstarch and water during the last 10 minutes of cooking.
