Ingredients:  

Main Ingredients

  • 2 lbs Beef chuck, cut into chunks
  • 1 large Onion, chopped
  • 2 cloves Garlic, minced
  • 3 cups Beef broth
  • 1 can Guinness beer
  • 2 tbsp Tomato paste
  • 3 large Carrots, sliced
  • 2 large Potatoes, peeled and cubed
  • 2 tbsp Olive oil
  • to taste Salt and pepper

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the beef chunks and brown on all sides. Remove and set aside.
  • 3. In the same pot, add the onions and garlic. Cook until softened.
  • 4. Stir in the tomato paste, then add the beef back to the pot.
  • 5. Pour in the beef broth and Guinness beer. Bring to a boil.
  • 6. Reduce heat, cover, and simmer for 1.5 hours.
  • 7. Add the carrots and potatoes. Cook for another 30 minutes, or until vegetables are tender.
  • 8. Season with salt and pepper to taste. Serve hot.

Notes:

For a thicker stew, you can mix a tablespoon of flour with a bit of water and stir it in during the last 10 minutes of cooking.
