Beef chuck, cut into chunks

Onion, chopped

Garlic, minced

Beef broth

Guinness beer

tbsp
Tomato paste

Carrots, sliced

Potatoes, peeled and cubed

Olive oil
to taste
Salt and pepper
Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the beef chunks and brown on all sides. Remove and set aside.
3. In the same pot, add the onions and garlic. Cook until softened.
4. Stir in the tomato paste, then add the beef back to the pot.
5. Pour in the beef broth and Guinness beer. Bring to a boil.
6. Reduce heat, cover, and simmer for 1.5 hours.
7. Add the carrots and potatoes. Cook for another 30 minutes, or until vegetables are tender.
8. Season with salt and pepper to taste. Serve hot.
Notes:
For a thicker stew, you can mix a tablespoon of flour with a bit of water and stir it in during the last 10 minutes of cooking.
