Ingredients:  

Main Ingredients

  • 1 cup red lentils
  • 2 cups pumpkin puree
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 4 cups vegetable broth
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp turmeric
  • to taste salt and pepper

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the chopped onion and garlic, and sauté until softened.
  • 3. Stir in the cumin, coriander, and turmeric, and cook for another minute.
  • 4. Add the red lentils, pumpkin puree, and vegetable broth. Bring to a boil.
  • 5. Reduce heat and simmer for 30-35 minutes, or until lentils are tender.
  • 6. Season with salt and pepper to taste. Serve hot.

Notes:

Feel free to add some spinach or kale for extra greens.
