red lentils

Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion and garlic, and sauté until softened.
3. Stir in the cumin, coriander, and turmeric, and cook for another minute.
4. Add the red lentils, pumpkin puree, and vegetable broth. Bring to a boil.
5. Reduce heat and simmer for 30-35 minutes, or until lentils are tender.
6. Season with salt and pepper to taste. Serve hot.
Notes:
Feel free to add some spinach or kale for extra greens.
