Ingredients:  

Main Ingredients

  • 500 g Beef, cubed
  • 1 large Onion, chopped
  • 2 cloves Garlic, minced
  • 2 tbsp Olive oil
  • 1 tsp Ground cumin
  • 1 tsp Ground cinnamon
  • 1 tsp Ground ginger
  • 400 g Canned tomatoes
  • 250 ml Beef stock
  • 2 medium Carrots, sliced
  • 1 medium Zucchini, sliced
  • 100 g Dried apricots, chopped
  • 1 tsp Salt to taste
  • 0.5 tsp Black pepper to taste
  • 2 tbsp Fresh cilantro, chopped for garnish

Instructions: 

  • 1. Heat olive oil in a tagine or heavy-bottomed pot over medium heat.
  • 2. Add the chopped onion and garlic, and cook until softened.
  • 3. Add the beef cubes and brown on all sides.
  • 4. Stir in the cumin, cinnamon, and ginger, and cook for another minute.
  • 5. Add the canned tomatoes, beef stock, carrots, zucchini, and dried apricots. Bring to a boil.
  • 6. Reduce heat to low, cover, and simmer for 1.5 to 2 hours, until the beef is tender.
  • 7. Season with salt and pepper to taste.
  • 8. Garnish with fresh cilantro before serving.

Notes:

Serve with couscous or crusty bread.
