Instructions:
1. Heat olive oil in a tagine or heavy-bottomed pot over medium heat.
2. Add the chopped onion and garlic, and cook until softened.
3. Add the beef cubes and brown on all sides.
4. Stir in the cumin, cinnamon, and ginger, and cook for another minute.
5. Add the canned tomatoes, beef stock, carrots, zucchini, and dried apricots. Bring to a boil.
6. Reduce heat to low, cover, and simmer for 1.5 to 2 hours, until the beef is tender.
7. Season with salt and pepper to taste.
8. Garnish with fresh cilantro before serving.
Notes:
Serve with couscous or crusty bread.
