Ingredients:  

Main Ingredients

  • 1 kg Chicken, cut into pieces
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tbsp Thyme
  • 2 tbsp Brown Sugar
  • 1 tbsp Soy Sauce
  • 1 tbsp Ketchup
  • 1 cup Chicken Broth
  • 1 small Cabbage, chopped
  • 1 tbsp Vegetable Oil
  • to taste Salt and Pepper

Instructions: 

  • 1. Season the chicken with salt, pepper, and thyme.
  • 2. Heat the vegetable oil in a large pot over medium heat. Add the brown sugar and let it caramelize.
  • 3. Add the chicken pieces to the pot and brown on all sides.
  • 4. Add the onion, garlic, soy sauce, and ketchup. Stir well.
  • 5. Pour in the chicken broth and bring to a boil. Reduce heat and let it simmer for 30 minutes.
  • 6. Add the chopped cabbage and cook for another 15 minutes, until the cabbage is tender.
  • 7. Adjust seasoning with salt and pepper to taste. Serve hot.

Notes:

For a spicier version, add a Scotch bonnet pepper.
