Beef Stew Meat

Olive Oil
to taste
Salt and Pepper
Instructions:
Heat olive oil in a large pot over medium heat.
Add beef and brown on all sides. Remove and set aside.
In the same pot, add onions and cook until soft.
Add garlic and cook for another minute.
Return beef to the pot. Add beef broth, tomato paste, and thyme.
Bring to a boil, then reduce heat and simmer for 1.5 hours.
Season with salt and pepper to taste. Serve hot.
Notes:
For a thicker stew, you can add a slurry of cornstarch and water during the last 10 minutes of cooking.
