Ingredients:  

Main Ingredients

  • 1 lb Beef Stew Meat cut into chunks
  • 2 large Onions sliced
  • 3 cloves Garlic minced
  • 4 cups Beef Broth
  • 2 tbsp Tomato Paste
  • 1 tsp Dried Thyme
  • 2 tbsp Olive Oil
  • to taste Salt and Pepper

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add beef and brown on all sides. Remove and set aside.
  • In the same pot, add onions and cook until soft.
  • Add garlic and cook for another minute.
  • Return beef to the pot. Add beef broth, tomato paste, and thyme.
  • Bring to a boil, then reduce heat and simmer for 1.5 hours.
  • Season with salt and pepper to taste. Serve hot.

Notes:

For a thicker stew, you can add a slurry of cornstarch and water during the last 10 minutes of cooking.
