Ingredients:  

Main Ingredients

  • 1 kg Beef shank
  • 200 g Chorizo sausage sliced
  • 200 g Chickpeas soaked overnight
  • 2 Carrots peeled and chopped
  • 2 Potatoes peeled and chopped
  • 1 Onion chopped
  • 3 cloves Garlic minced
  • 1 tsp Paprika
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 2 L Water

Instructions: 

  • 1. In a large pot, add the beef shank, chorizo, and water. Bring to a boil.
  • 2. Skim off any foam that forms on the surface.
  • 3. Add the chickpeas, carrots, potatoes, onion, garlic, paprika, salt, and pepper.
  • 4. Reduce heat to low and simmer for 2 hours, or until the meat is tender.
  • 5. Adjust seasoning if needed and serve hot.

Notes:

This stew is perfect for a cold day. Serve with crusty bread.
