Instructions:
1. In a large pot, add the beef shank, chorizo, and water. Bring to a boil.
2. Skim off any foam that forms on the surface.
3. Add the chickpeas, carrots, potatoes, onion, garlic, paprika, salt, and pepper.
4. Reduce heat to low and simmer for 2 hours, or until the meat is tender.
5. Adjust seasoning if needed and serve hot.
Notes:
This stew is perfect for a cold day. Serve with crusty bread.
