Ingredients:  

Main Ingredients

  • 2 large Sweet Potatoes peeled and cubed
  • 1 can Chickpeas drained and rinsed
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 1 tsp Ground Cumin
  • 1 tsp Ground Cinnamon
  • 1 tsp Ground Turmeric
  • 1 tsp Ground Ginger
  • 4 cups Vegetable Broth
  • 1 can Diced Tomatoes
  • 1 tbsp Olive Oil
  • to taste Salt
  • to taste Black Pepper

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
  • 2. Add the minced garlic, ground cumin, ground cinnamon, ground turmeric, and ground ginger. Cook for another 2 minutes, stirring frequently.
  • 3. Add the cubed sweet potatoes, chickpeas, diced tomatoes, and vegetable broth. Bring to a boil.
  • 4. Reduce heat to low and let simmer for about 30-35 minutes, or until the sweet potatoes are tender.
  • 5. Season with salt and black pepper to taste. Serve hot.

This stew is perfect for a cozy dinner and pairs well with crusty bread.
