Instructions:
1. Heat the vegetable oil in a large pot over medium heat.
2. Add the chopped onion and minced garlic. Sauté until the onion is translucent.
3. Add the callaloo leaves and cook until wilted.
4. Pour in the coconut milk and chicken broth. Stir to combine.
5. Add the thyme, salt, and black pepper. Bring to a boil, then reduce the heat and let it simmer for about 20 minutes.
6. Serve hot and enjoy!
