Ingredients:  

Main Ingredients

  • 1 bunch Callaloo leaves washed and chopped
  • 1 cup Coconut milk
  • 1 cup Chicken broth
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 tbsp Vegetable oil
  • 1 tsp Thyme dried
  • 1 tsp Salt or to taste
  • 1/2 tsp Black pepper or to taste

Instructions: 

  • 1. Heat the vegetable oil in a large pot over medium heat.
  • 2. Add the chopped onion and minced garlic. Sauté until the onion is translucent.
  • 3. Add the callaloo leaves and cook until wilted.
  • 4. Pour in the coconut milk and chicken broth. Stir to combine.
  • 5. Add the thyme, salt, and black pepper. Bring to a boil, then reduce the heat and let it simmer for about 20 minutes.
  • 6. Serve hot and enjoy!

Notes:

This stew is great served with rice or bread.
