Ingredients:  

Main Ingredients

  • 2 cups Acorns leached and chopped
  • 1 cup Carrots chopped
  • 1 cup Celery chopped
  • 1 cup Onion chopped
  • 4 cups Vegetable Broth
  • 2 tbsp Olive Oil
  • 2 cloves Garlic minced
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 tsp Thyme dried

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Add chopped onions, carrots, and celery. Cook until softened, about 5 minutes.
  • 3. Add minced garlic and cook for another minute.
  • 4. Add the chopped acorns and vegetable broth. Bring to a boil.
  • 5. Reduce heat and let simmer for 30 minutes.
  • 6. Season with salt, pepper, and thyme. Stir well.
  • 7. Serve hot and enjoy!

Notes:

Make sure to properly leach the acorns to remove tannins before using them in the stew.
