Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onions, carrots, and celery. Cook until softened, about 5 minutes.
3. Add minced garlic and cook for another minute.
4. Add the chopped acorns and vegetable broth. Bring to a boil.
5. Reduce heat and let simmer for 30 minutes.
6. Season with salt, pepper, and thyme. Stir well.
7. Serve hot and enjoy!
Notes:
Make sure to properly leach the acorns to remove tannins before using them in the stew.
