bell peppers, sliced

Instructions:
Heat the oil in a large pot over medium heat.
Add the onions and cook until they are soft and translucent.
Add the bell peppers and cook for another 5 minutes.
Add the tomatoes, garlic, paprika, salt, and pepper. Stir well.
Reduce the heat to low, cover, and simmer for 30 minutes, stirring occasionally.
Serve hot with fresh bread or rice.
Notes:
This stew is even better the next day after the flavors have melded together.
