Ingredients:  

Main Ingredients

  • 2 bulbs Fennel sliced
  • 2 tbsp Olive Oil
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 4 cups Vegetable Broth
  • 2 cups Diced Tomatoes canned
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 tsp Thyme dried
  • 1 cup Chickpeas cooked or canned

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and cook until translucent, about 5 minutes.
  • Add minced garlic and sliced fennel, cook for another 5 minutes.
  • Pour in vegetable broth and diced tomatoes, bring to a boil.
  • Add salt, pepper, and thyme. Reduce heat and simmer for 30 minutes.
  • Stir in chickpeas and cook for an additional 10 minutes.
  • Serve hot and enjoy!

Notes:

Feel free to add other vegetables like carrots or potatoes for extra heartiness.
