Instructions:
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until translucent, about 5 minutes.
Add minced garlic and sliced fennel, cook for another 5 minutes.
Pour in vegetable broth and diced tomatoes, bring to a boil.
Add salt, pepper, and thyme. Reduce heat and simmer for 30 minutes.
Stir in chickpeas and cook for an additional 10 minutes.
Serve hot and enjoy!
Notes:
Feel free to add other vegetables like carrots or potatoes for extra heartiness.
