Ingredients:  

Main Ingredients

  • 2 lbs pork shoulder cut into chunks
  • 2 tbsp olive oil
  • 1 onion chopped
  • 3 cloves garlic minced
  • 2 cups chicken broth
  • 1 cup red wine
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 2 bay leaves
  • 1 tsp dried thyme
  • to taste salt and pepper

Instructions: 

  • 1. Heat the olive oil in a Dutch oven over medium-high heat.
  • 2. Brown the pork shoulder chunks on all sides, then remove and set aside.
  • 3. In the same pot, add the chopped onion and minced garlic, cooking until softened.
  • 4. Pour in the red wine, scraping up any browned bits from the bottom of the pot.
  • 5. Return the pork to the pot, then add the chicken broth, carrots, celery, bay leaves, and dried thyme.
  • 6. Bring to a simmer, then cover and cook on low heat for about 2 hours, or until the pork is tender.
  • 7. Season with salt and pepper to taste before serving.

Notes:

Serve with crusty bread or over mashed potatoes for a complete meal.
