pork shoulder
cut into chunks

olive oil

onion
chopped

garlic
minced

chicken broth

cup
red wine

carrots
sliced
2
celery stalks
sliced

bay leaves

tsp
dried thyme
to taste
salt and pepper
Instructions:
1. Heat the olive oil in a Dutch oven over medium-high heat.
2. Brown the pork shoulder chunks on all sides, then remove and set aside.
3. In the same pot, add the chopped onion and minced garlic, cooking until softened.
4. Pour in the red wine, scraping up any browned bits from the bottom of the pot.
5. Return the pork to the pot, then add the chicken broth, carrots, celery, bay leaves, and dried thyme.
6. Bring to a simmer, then cover and cook on low heat for about 2 hours, or until the pork is tender.
7. Season with salt and pepper to taste before serving.
Notes:
Serve with crusty bread or over mashed potatoes for a complete meal.
