Instructions:
Heat olive oil in a large pot over medium heat.
Add chopped onion and minced garlic. Sauté until softened.
Add chopped bell pepper and cook for another 5 minutes.
Stir in rice, diced tomatoes, vegetable broth, chili powder, cumin, salt, and black pepper.
Bring to a boil, then reduce heat and simmer for 20 minutes, or until rice is cooked.
Stir in frozen peas and cook for an additional 5 minutes.
Serve hot and enjoy!
