Ingredients:  

Main Ingredients

  • 1 cup Rice uncooked
  • 1 tbsp Olive Oil
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 medium Bell Pepper chopped
  • 1 can Diced Tomatoes 400g can
  • 4 cups Vegetable Broth
  • 1 tsp Chili Powder
  • 1 tsp Cumin
  • 1 tsp Salt or to taste
  • 1/2 tsp Black Pepper
  • 1 cup Frozen Peas

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and minced garlic. Sauté until softened.
  • Add chopped bell pepper and cook for another 5 minutes.
  • Stir in rice, diced tomatoes, vegetable broth, chili powder, cumin, salt, and black pepper.
  • Bring to a boil, then reduce heat and simmer for 20 minutes, or until rice is cooked.
  • Stir in frozen peas and cook for an additional 5 minutes.
  • Serve hot and enjoy!
