Ingredients:  

Main Ingredients

  • 1 cup Palm Oil
  • 1 lb Chicken, cut into pieces
  • 1 large Onion, chopped
  • 2 cloves Garlic, minced
  • 2 cups Chicken broth
  • 1 can Tomatoes, diced
  • 1 tsp Salt
  • 1 tsp Black pepper

Instructions: 

  • Heat the palm oil in a large pot over medium heat.
  • Add the chicken pieces and cook until browned on all sides.
  • Add the chopped onion and minced garlic, and cook until the onion is translucent.
  • Pour in the chicken broth and diced tomatoes. Stir well.
  • Season with salt and black pepper. Bring to a boil.
  • Reduce heat to low and simmer for 30 minutes, or until the chicken is cooked through and tender.
  • Serve hot with rice or your favorite side dish.

Notes:

This stew is even better the next day, as the flavors have more time to meld together.
