Instructions:
Heat the palm oil in a large pot over medium heat.
Add the chicken pieces and cook until browned on all sides.
Add the chopped onion and minced garlic, and cook until the onion is translucent.
Pour in the chicken broth and diced tomatoes. Stir well.
Season with salt and black pepper. Bring to a boil.
Reduce heat to low and simmer for 30 minutes, or until the chicken is cooked through and tender.
Serve hot with rice or your favorite side dish.
Notes:
This stew is even better the next day, as the flavors have more time to meld together.
