Mixed Seafood (shrimp, mussels, fish)

Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onion and cook until translucent, about 5 minutes.
3. Stir in minced garlic and cook for another minute.
4. Add diced tomatoes and fish stock, bring to a simmer.
5. Add mixed seafood, salt, black pepper, oregano, and basil. Simmer for 10-15 minutes until seafood is cooked through.
6. Stir in fresh parsley before serving.
Notes:
Serve with crusty bread for a complete meal.
