Ingredients:  

Main Ingredients

  • 2 tbsp Olive Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 can Diced Tomatoes (14.5 oz)
  • 2 cups Fish Stock
  • 1 lb Mixed Seafood (shrimp, mussels, fish)
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 tsp Dried Oregano
  • 1 tsp Dried Basil
  • 1/4 cup Fresh Parsley, chopped

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Add chopped onion and cook until translucent, about 5 minutes.
  • 3. Stir in minced garlic and cook for another minute.
  • 4. Add diced tomatoes and fish stock, bring to a simmer.
  • 5. Add mixed seafood, salt, black pepper, oregano, and basil. Simmer for 10-15 minutes until seafood is cooked through.
  • 6. Stir in fresh parsley before serving.

Notes:

Serve with crusty bread for a complete meal.
