Instructions:
1. Heat a Dutch oven over medium heat and add a bit of oil.
2. Brown the stew meat on all sides, then remove and set aside.
3. In the same pot, add onions and garlic, cooking until softened.
4. Add the beef broth, carrots, potatoes, salt, pepper, and thyme. Return the meat to the pot.
5. Bring to a boil, then reduce heat and let simmer for 2 hours, or until meat is tender.
6. Serve hot and enjoy!
