Instructions:
Heat olive oil in a large pot over medium heat.
Add beef stew meat and cook until browned on all sides.
Add chopped onion and minced garlic, cook until softened.
Stir in chopped carrots and celery, cook for another 5 minutes.
Pour in beef broth and diced tomatoes, bring to a boil.
Reduce heat to low, add salt, pepper, paprika, and thyme. Cover and simmer for 45 minutes.
Add frozen peas, cook for an additional 10 minutes.
Serve hot and enjoy!
Notes:
This stew is perfect for a cozy dinner. Serve with cornbread for an authentic touch.
