Instructions:
Heat the olive oil in a large pot over medium-high heat.
Add the beef stew meat and cook until browned on all sides.
Add the carrots, potatoes, onions, and garlic to the pot. Cook for 5 minutes, stirring occasionally.
Pour in the beef broth and bring to a boil. Reduce heat to low and simmer for 30 minutes, or until vegetables are tender.
Season with salt and black pepper to taste. Serve hot.
Notes:
Feel free to add other vegetables like peas or corn for extra flavor.
