Instructions:
Heat the olive oil in a large pot over medium heat.
Add the diced onion and minced garlic, sauté until translucent.
Add the sliced smoked sausage and cook until browned.
Add the chopped swamp cabbage and stir well.
Pour in the chicken broth, bring to a boil, then reduce heat and simmer for 30 minutes.
Season with salt and black pepper to taste. Serve hot.
Notes:
This stew is even better the next day after the flavors have melded together.
