large onion

ground cinnamon

diced tomatoes

peeled and sliced

Instructions:
Heat olive oil in a large pot over medium heat.
Add beef and cook until browned on all sides.
Add chopped onion and cook until softened.
Stir in garlic, cumin, coriander, cinnamon, and turmeric. Cook for 1 minute.
Add diced tomatoes and beef broth. Bring to a boil.
Reduce heat, cover, and simmer for 1 hour.
Add carrots and potatoes. Simmer for another 30-40 minutes, until vegetables are tender.
Season with salt and pepper to taste. Serve hot.
Notes:
This stew is perfect for a cozy dinner. Serve with rice or bread.
