Instructions:
1. Heat a large pot over medium heat and add a bit of oil.
2. Add the chopped onions and minced garlic, sauté until fragrant.
3. Add the beef cubes and brown them on all sides.
4. Stir in soy sauce, brown sugar, ground coriander, and ground cumin.
5. Pour in the coconut milk and beef broth, then add bay leaves and cinnamon stick.
6. Bring to a boil, then reduce heat and let it simmer for about 2 hours, or until the beef is tender.
7. Season with salt and black pepper to taste.
8. Serve hot with rice or bread.
Notes:
This stew tastes even better the next day, so feel free to make it ahead of time.
