peeled and diced

Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add beef stew meat and cook until browned on all sides.
3. Add chopped onion and minced garlic, cook until softened.
4. Pour in beef broth, diced tomatoes, and bring to a boil.
5. Add potatoes and carrots, reduce heat and simmer for 1 hour.
6. Add canned green beans and corn, simmer for another 30 minutes.
7. Season with salt and black pepper to taste.
8. Serve hot and enjoy!

Feel free to add any other canned vegetables you like.
