Instructions:
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and cook until translucent, about 5 minutes.
Add the minced garlic and cook for another minute.
Stir in the diced tomatoes and vegetable broth.
Add the chopped vegetables, salt, pepper, and oregano. Bring to a boil.
Reduce heat and let it simmer for about 30 minutes, or until the vegetables are tender.
Serve hot and enjoy!
