Ingredients:  

Main Ingredients

  • 1 whole Chicken cut into pieces
  • 2 tbsp Olive Oil
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 2 cups Chicken Broth
  • 1 cup Tomatoes diced
  • 1 cup Red Bell Pepper chopped
  • 1 tsp Paprika
  • 1 tsp Salt
  • 0.5 tsp Black Pepper
  • 2 tbsp Parsley chopped

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Add the chopped onion and minced garlic, sauté until softened.
  • 3. Add the chicken pieces and brown on all sides.
  • 4. Pour in the chicken broth, diced tomatoes, and chopped red bell pepper.
  • 5. Stir in the paprika, salt, and black pepper.
  • 6. Bring to a boil, then reduce heat and simmer for 30-35 minutes, until chicken is cooked through.
  • 7. Garnish with chopped parsley before serving.

Notes:

Serve with crusty bread or over rice.
