Ingredients:  

Main Ingredients

  • 2 lbs Beef Stew Meat
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 4 cups Beef Broth
  • 3 large Carrots sliced
  • 4 large Potatoes diced
  • 2 tbsp Tomato Paste
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 2 tbsp Olive Oil

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the beef stew meat and cook until browned on all sides.
  • 3. Add the chopped onion and minced garlic. Cook until the onion is translucent.
  • 4. Stir in the tomato paste, salt, and black pepper.
  • 5. Pour in the beef broth and bring to a boil.
  • 6. Reduce the heat to low, cover, and simmer for 1 hour.
  • 7. Add the sliced carrots and diced potatoes. Simmer for another 45 minutes or until the vegetables are tender.
  • 8. Adjust seasoning with salt and pepper to taste. Serve hot.

Notes:

Feel free to add other vegetables like peas or green beans for extra flavor and nutrition.
