Ingredients:  

Main Ingredients

  • 1 lb Polish sausage sliced
  • 2 potatoes peeled and diced
  • 2 carrots sliced
  • 1 onion chopped
  • 3 cloves garlic minced
  • 4 cups chicken broth
  • 1 tsp paprika
  • 1 tsp dried thyme
  • to taste salt and pepper

Instructions: 

  • 1. In a large pot, cook the sliced sausage over medium heat until browned.
  • 2. Add the chopped onion and minced garlic, cook until softened.
  • 3. Stir in the diced potatoes and sliced carrots, cook for a few minutes.
  • 4. Pour in the chicken broth, add paprika and dried thyme. Bring to a boil.
  • 5. Reduce heat and simmer for about 30 minutes, or until vegetables are tender.
  • 6. Season with salt and pepper to taste. Serve hot.

Notes:

This stew is even better the next day!
