Olive oil
Instructions:
Heat olive oil in a large pot over medium heat.
Add the onion and garlic, and sauté until softened.
Add the sweet potatoes, cumin, and paprika. Cook for a few minutes.
Pour in the vegetable broth and diced tomatoes. Bring to a boil.
Reduce heat and simmer until sweet potatoes are tender, about 20 minutes.
Add the black beans and cook for another 5 minutes. Season with salt and pepper to taste.
Notes:
Great served with a side of rice or crusty bread.
