Ingredients:  

Main Ingredients

  • 2 cups Black beans cooked or canned
  • 2 medium Sweet potatoes peeled and diced
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 4 cups Vegetable broth
  • 1 can Diced tomatoes
  • to taste Salt and pepper
  • 1 tbsp Olive oil

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add the onion and garlic, and sauté until softened.
  • Add the sweet potatoes, cumin, and paprika. Cook for a few minutes.
  • Pour in the vegetable broth and diced tomatoes. Bring to a boil.
  • Reduce heat and simmer until sweet potatoes are tender, about 20 minutes.
  • Add the black beans and cook for another 5 minutes. Season with salt and pepper to taste.

Notes:

Great served with a side of rice or crusty bread.
