Ingredients:

red bell pepper, chopped

canned tomatoes

fish stock

dried thyme

dried oregano

white fish fillets, cut into chunks

lemon, juiced
to taste
salt and pepper

fresh parsley, chopped
Instructions:
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and cook until softened, about 5 minutes.
Stir in the minced garlic and chopped red bell pepper, cooking for another 2-3 minutes.
Add the canned tomatoes, fish stock, dried thyme, and dried oregano. Bring to a simmer.
Gently add the chunks of white fish to the pot. Simmer for about 10 minutes, or until the fish is cooked through.
Stir in the lemon juice and season with salt and pepper to taste.
Serve hot, garnished with fresh parsley.
Notes:
This Provencal Fish Stew is perfect for a cozy dinner. Serve with crusty bread.
