Seitan, cubed

Carrots, sliced

Potatoes, diced

Onions, chopped

Garlic, minced

Vegetable broth

Soy sauce

Salt and pepper
Instructions:
1. Heat a large pot over medium heat and add a bit of oil.
2. Add the onions and garlic, sauté until translucent.
3. Add the carrots and potatoes, cook for about 5 minutes.
4. Stir in the seitan, vegetable broth, soy sauce, thyme, and rosemary.
5. Bring to a boil, then reduce heat and simmer for 30 minutes.
6. Season with salt and pepper to taste. Serve hot.
Notes:
Feel free to add other vegetables like peas or bell peppers.
