Ingredients:  

Main Ingredients

  • 2 cups Seitan, cubed
  • 1 cup Carrots, sliced
  • 1 cup Potatoes, diced
  • 1 cup Onions, chopped
  • 3 cloves Garlic, minced
  • 4 cups Vegetable broth
  • 2 tbsp Soy sauce
  • 1 tsp Thyme
  • 1 tsp Rosemary
  • to taste Salt and pepper

Instructions: 

  • 1. Heat a large pot over medium heat and add a bit of oil.
  • 2. Add the onions and garlic, sauté until translucent.
  • 3. Add the carrots and potatoes, cook for about 5 minutes.
  • 4. Stir in the seitan, vegetable broth, soy sauce, thyme, and rosemary.
  • 5. Bring to a boil, then reduce heat and simmer for 30 minutes.
  • 6. Season with salt and pepper to taste. Serve hot.

Notes:

Feel free to add other vegetables like peas or bell peppers.
