Ingredients:  

Main Ingredients

  • 1 lb pork shoulder, cubed
  • 2 poblano peppers, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add pork and cook until browned on all sides.
  • Add onion, garlic, and poblano peppers. Cook until vegetables are softened.
  • Stir in cumin, oregano, salt, and pepper.
  • Pour in chicken broth and bring to a boil.
  • Reduce heat and simmer for 30 minutes, until pork is tender.

Serve hot with rice or tortillas.
