Instructions:
Heat olive oil in a large pot over medium heat.
Add cubed pork and cook until browned on all sides.
Add chopped onion and cook until softened.
Add minced garlic and cook for another minute.
Add sliced mushrooms and cook until they release their moisture.
Pour in chicken broth, add salt, pepper, and thyme. Stir well.
Bring to a boil, then reduce heat and simmer for 1 hour.
Serve hot and enjoy!
Notes:
Feel free to add your favorite vegetables to the stew.
