Instructions:
1. Heat a large pot over medium heat. Add a bit of oil.
2. Add the chopped onion and garlic. Sauté until translucent.
3. Add the diced potatoes and sliced carrots. Stir well.
4. Pour in the vegetable broth. Bring to a boil.
5. Reduce heat to a simmer. Cook for about 45 minutes or until vegetables are tender.
6. Season with salt and black pepper to taste. Serve hot.
Notes:
Feel free to add other vegetables like peas or corn for extra flavor.
