Ingredients:  

Main Ingredients

  • 4 pcs Potatoes peeled and diced
  • 3 pcs Carrots peeled and sliced
  • 1 pcs Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Vegetable Broth
  • 1 tsp Salt to taste
  • 0.5 tsp Black Pepper to taste

Instructions: 

  • 1. Heat a large pot over medium heat. Add a bit of oil.
  • 2. Add the chopped onion and garlic. Sauté until translucent.
  • 3. Add the diced potatoes and sliced carrots. Stir well.
  • 4. Pour in the vegetable broth. Bring to a boil.
  • 5. Reduce heat to a simmer. Cook for about 45 minutes or until vegetables are tender.
  • 6. Season with salt and black pepper to taste. Serve hot.

Notes:

Feel free to add other vegetables like peas or corn for extra flavor.
