Instructions:
Heat the vegetable oil in a large pot over medium heat. Add the beef stew meat and cook until browned on all sides.
Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
Pour in the beef broth and water. Add the sliced carrots, soy sauce, salt, and black pepper. Bring to a boil.
Reduce the heat to low and let it simmer for about 1.5 to 2 hours, or until the beef is tender.
In the last 10 minutes of cooking, add the ramen noodles to the pot. Cook until the noodles are tender.
Serve hot, garnished with chopped green onions.
Notes:
This beef stew ramen is perfect for a cozy night in. Feel free to add other vegetables like mushrooms or bok choy for extra flavor.
