Instructions:
1. In a large pot, heat some oil over medium heat. Add the beef stew meat and cook until browned on all sides.
2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
3. Pour in the beef broth and bring to a boil. Reduce the heat and let it simmer for 30 minutes.
4. Add the sliced carrots, diced potatoes, salt, black pepper, and dried thyme. Simmer for another 30 minutes or until the vegetables are tender.
5. Taste and adjust seasoning if needed. Serve hot.
Notes:
Feel free to add other vegetables like peas or green beans.
