Ingredients:

lima beans, drained and rinsed

corn, drained

frozen okra

smoked paprika

thyme

Salt and pepper
Instructions:
Heat olive oil in a large pot over medium heat.
Add onion, garlic, and bell pepper. Sauté until softened.
Pour in vegetable broth and diced tomatoes. Bring to a simmer.
Add lima beans, corn, and okra. Stir to combine.
Season with smoked paprika, thyme, salt, and pepper.
Simmer for about 45 minutes, stirring occasionally.
Serve hot.
Notes:
Feel free to add more vegetables or adjust the spices to your taste.
