Ingredients:  

Main Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 cups vegetable broth
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) lima beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 cup frozen okra
  • 1 teaspoon smoked paprika
  • 1 teaspoon thyme
  • to taste Salt and pepper

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add onion, garlic, and bell pepper. Sauté until softened.
  • Pour in vegetable broth and diced tomatoes. Bring to a simmer.
  • Add lima beans, corn, and okra. Stir to combine.
  • Season with smoked paprika, thyme, salt, and pepper.
  • Simmer for about 45 minutes, stirring occasionally.
  • Serve hot.

Notes:

Feel free to add more vegetables or adjust the spices to your taste.
