Ingredients:  

Main Ingredients

  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 can coconut milk
  • 2 cups vegetable broth
  • 2 cups mixed vegetables (carrots, bell peppers, peas)
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup chopped cilantro for garnish

Instructions: 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and cook until translucent, about 5 minutes.
  • Stir in the garlic and ginger, cooking for another 2 minutes.
  • Pour in the coconut milk and vegetable broth, stirring to combine.
  • Add the mixed vegetables, turmeric, cumin, salt, and black pepper.
  • Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes.
  • Garnish with chopped cilantro before serving.

This coconut stew is versatile. Feel free to add your favorite vegetables or proteins.
