Ingredients:  

Main Ingredients

  • 1 lb Beef Stew Meat cut into chunks
  • 2 tbsp Olive Oil
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 2 Carrots sliced
  • 2 Potatoes diced
  • 1 can Tomato Paste (6 oz)
  • 4 cups Beef Broth
  • 1 tsp Ground Cumin
  • 1 tsp Ground Cinnamon
  • 1 tsp Salt or to taste
  • 1/2 tsp Black Pepper or to taste
  • 1/4 cup Fresh Parsley chopped, for garnish

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat. Add beef and cook until browned on all sides.
  • 2. Add chopped onion and minced garlic to the pot. Cook until the onion is translucent.
  • 3. Stir in sliced carrots and diced potatoes. Cook for a few minutes.
  • 4. Add tomato paste, beef broth, ground cumin, ground cinnamon, salt, and black pepper. Stir well to combine.
  • 5. Bring to a boil, then reduce heat to low. Cover and simmer for about 1.5 hours, or until the beef is tender.
  • 6. Garnish with chopped fresh parsley before serving.

Notes:

This stew is perfect for a cozy dinner. Serve with rice or bread.
