Instructions:
1. Heat olive oil in a large pot over medium heat. Add beef and cook until browned on all sides.
2. Add chopped onion and minced garlic to the pot. Cook until the onion is translucent.
3. Stir in sliced carrots and diced potatoes. Cook for a few minutes.
4. Add tomato paste, beef broth, ground cumin, ground cinnamon, salt, and black pepper. Stir well to combine.
5. Bring to a boil, then reduce heat to low. Cover and simmer for about 1.5 hours, or until the beef is tender.
6. Garnish with chopped fresh parsley before serving.
Notes:
This stew is perfect for a cozy dinner. Serve with rice or bread.
