Instructions:
1. Heat a large pot over medium heat and add a bit of oil.
2. Add chicken thighs and cook until browned on all sides.
3. Remove chicken and set aside. In the same pot, add onions, garlic, celery, and carrots. Cook until softened.
4. Return chicken to the pot. Add chicken broth, heavy cream, salt, pepper, and thyme. Bring to a boil.
5. Reduce heat and let simmer for 30 minutes, or until chicken is cooked through and tender.
6. Serve hot and enjoy!
