Ingredients:  

Main Ingredients

  • 1 lb Chicken Thighs boneless, skinless
  • 2 cups Chicken Broth
  • 1 cup Heavy Cream
  • 1 cup Chopped Celery
  • 1 cup Chopped Carrots
  • 1 cup Chopped Onions
  • 2 cloves Garlic minced
  • 1 tsp Salt to taste
  • 1 tsp Black Pepper to taste
  • 1 tsp Dried Thyme

Instructions: 

  • 1. Heat a large pot over medium heat and add a bit of oil.
  • 2. Add chicken thighs and cook until browned on all sides.
  • 3. Remove chicken and set aside. In the same pot, add onions, garlic, celery, and carrots. Cook until softened.
  • 4. Return chicken to the pot. Add chicken broth, heavy cream, salt, pepper, and thyme. Bring to a boil.
  • 5. Reduce heat and let simmer for 30 minutes, or until chicken is cooked through and tender.
  • 6. Serve hot and enjoy!

Notes:

Feel free to add more low-carb veggies if you like.
