Ingredients:  

Main Ingredients

  • 1 whole Chicken, cut into pieces
  • 2 tbsp Brown sugar
  • 1 large Onion, chopped
  • 2 cloves Garlic, minced
  • 1 inch Ginger, grated
  • 1 tbsp Soy sauce
  • 1 tbsp Ketchup
  • 1 tsp Thyme
  • 1 tsp Allspice
  • 2 cups Chicken broth
  • 1 whole Scotch bonnet pepper, chopped optional
  • 2 tbsp Vegetable oil

Instructions: 

  • 1. Season the chicken with salt, pepper, and allspice.
  • 2. Heat the oil in a large pot over medium heat and add the brown sugar. Stir until the sugar melts and turns dark brown.
  • 3. Add the chicken pieces to the pot and brown on all sides.
  • 4. Add the onion, garlic, ginger, soy sauce, ketchup, thyme, and Scotch bonnet pepper. Stir well.
  • 5. Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 45 minutes to an hour, until the chicken is cooked through and tender.
  • 6. Serve hot with rice or your favorite side.

Notes:

For extra flavor, marinate the chicken overnight with the spices.
