1. Season the chicken with salt, pepper, and allspice.
2. Heat the oil in a large pot over medium heat and add the brown sugar. Stir until the sugar melts and turns dark brown.
3. Add the chicken pieces to the pot and brown on all sides.
4. Add the onion, garlic, ginger, soy sauce, ketchup, thyme, and Scotch bonnet pepper. Stir well.
5. Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 45 minutes to an hour, until the chicken is cooked through and tender.
6. Serve hot with rice or your favorite side.
