Ingredients:  

Main Ingredients

  • 1 lb Dried black beans soaked overnight
  • 1 Large onion chopped
  • 4 cloves Garlic minced
  • 1 Green bell pepper chopped
  • 1 Red bell pepper chopped
  • 1 lb Smoked sausage sliced
  • 1 tsp Ground cumin
  • 1 tsp Ground coriander
  • 1 tsp Paprika
  • 1 tsp Salt to taste
  • 1 tsp Black pepper to taste
  • 6 cups Water or chicken broth
  • 1 bunch Fresh cilantro chopped, for garnish

Instructions: 

  • 1. Drain and rinse the soaked black beans.
  • 2. In a large pot, sauté the onion, garlic, and bell peppers until soft.
  • 3. Add the smoked sausage and cook for a few more minutes.
  • 4. Stir in the cumin, coriander, paprika, salt, and black pepper.
  • 5. Add the black beans and water or chicken broth. Bring to a boil.
  • 6. Reduce heat and simmer for about 2 hours, or until beans are tender.
  • 7. Adjust seasoning if necessary. Garnish with fresh cilantro before serving.

Notes:

Serve with rice or crusty bread for a complete meal.
