Dried black beans
soaked overnight

Instructions:
1. Drain and rinse the soaked black beans.
2. In a large pot, sauté the onion, garlic, and bell peppers until soft.
3. Add the smoked sausage and cook for a few more minutes.
4. Stir in the cumin, coriander, paprika, salt, and black pepper.
5. Add the black beans and water or chicken broth. Bring to a boil.
6. Reduce heat and simmer for about 2 hours, or until beans are tender.
7. Adjust seasoning if necessary. Garnish with fresh cilantro before serving.
Notes:
Serve with rice or crusty bread for a complete meal.
