Ingredients:  

Main Ingredients

  • 1 kg Beef chuck cut into chunks
  • 2 tbsp Vegetable oil
  • 2 Onions chopped
  • 3 cloves Garlic minced
  • 4 Carrots sliced
  • 4 Potatoes quartered
  • 1 cup Beef stock
  • 1 cup Red wine
  • 2 tbsp Tomato paste
  • 2 tsp Salt
  • 1 tsp Black pepper
  • 2 tsp Dried thyme
  • 2 tsp Dried rosemary

Instructions: 

  • Heat the oil in a cast-iron pot over medium heat.
  • Add the beef chunks and brown them on all sides.
  • Remove the beef and set aside. In the same pot, sauté the onions and garlic until soft.
  • Return the beef to the pot and add the carrots, potatoes, beef stock, red wine, tomato paste, salt, pepper, thyme, and rosemary.
  • Cover the pot and simmer on low heat for about 3 hours, stirring occasionally.
  • Serve hot and enjoy!

Notes:

For best results, cook the stew slowly over a wood fire.
