shrimp, peeled and deveined

white fish fillets, cut into chunks

coconut milk

fish stock

onion, chopped

garlic cloves, minced

bell pepper, chopped

thyme

Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add onion, garlic, and bell pepper. Sauté until softened.
3. Stir in thyme, paprika, salt, and black pepper.
4. Pour in coconut milk and fish stock. Bring to a simmer.
5. Add shrimp and fish chunks. Cook until seafood is done, about 5-7 minutes.
6. Serve hot with rice or bread.
Notes:
This stew is best enjoyed fresh but can be stored in the fridge for up to 2 days.
