Ingredients:  

Main Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 lb white fish fillets, cut into chunks
  • 1 cup coconut milk
  • 2 cups fish stock
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 bell pepper, chopped
  • 1 tsp thyme
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Add onion, garlic, and bell pepper. Sauté until softened.
  • 3. Stir in thyme, paprika, salt, and black pepper.
  • 4. Pour in coconut milk and fish stock. Bring to a simmer.
  • 5. Add shrimp and fish chunks. Cook until seafood is done, about 5-7 minutes.
  • 6. Serve hot with rice or bread.

Notes:

This stew is best enjoyed fresh but can be stored in the fridge for up to 2 days.
