Ingredients:  

Main Ingredients

  • 2 tbsp Vegetable Oil
  • 1 large Onion, chopped
  • 2 cloves Garlic, minced
  • 2 medium Carrots, sliced
  • 2 medium Potatoes, diced
  • 1 can Corned Beef, cubed
  • 4 cups Beef Broth
  • 1 tsp Salt
  • 1 tsp Black Pepper

Instructions: 

  • Heat the vegetable oil in a large pot over medium heat.
  • Add the chopped onion and garlic, and sauté until softened.
  • Add the sliced carrots and diced potatoes, and cook for a few minutes.
  • Add the cubed corned beef and stir to combine.
  • Pour in the beef broth, and season with salt and black pepper.
  • Bring to a boil, then reduce heat and simmer for about 45 minutes, or until vegetables are tender.
  • Serve hot.

This stew is a simple yet hearty meal, perfect for cold days.
