chicken broth

thyme

to taste
salt and pepper
Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add chicken thighs and brown on all sides. Remove and set aside.
3. In the same pot, add onions and garlic. Sauté until softened.
4. Add carrots and potatoes. Cook for a few minutes.
5. Pour in chicken broth, thyme, and rosemary. Bring to a boil.
6. Return chicken thighs to the pot. Reduce heat and simmer for 30 minutes.
7. Season with salt and pepper to taste. Serve hot.
Notes:
Feel free to add other vegetables like peas or green beans for variety.
