Ingredients:  

Main Ingredients

  • 8 chicken thighs bone-in, skinless
  • 2 tbsp olive oil
  • 1 onion chopped
  • 3 cloves garlic minced
  • 3 carrots sliced
  • 3 potatoes diced
  • 4 cups chicken broth
  • 1 tsp thyme dried
  • 1 tsp rosemary dried
  • to taste salt and pepper

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Add chicken thighs and brown on all sides. Remove and set aside.
  • 3. In the same pot, add onions and garlic. Sauté until softened.
  • 4. Add carrots and potatoes. Cook for a few minutes.
  • 5. Pour in chicken broth, thyme, and rosemary. Bring to a boil.
  • 6. Return chicken thighs to the pot. Reduce heat and simmer for 30 minutes.
  • 7. Season with salt and pepper to taste. Serve hot.

Notes:

Feel free to add other vegetables like peas or green beans for variety.
