Instructions:
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and cook until translucent.
Add the minced garlic and cook for another minute.
Add the chopped tomatoes and cook for 5 minutes.
Pour in the white wine and let it simmer for a few minutes.
Add the squid, paprika, salt, and black pepper. Stir well.
Pour in the fish stock, bring to a boil, then reduce heat and let it simmer for 30 minutes.
Garnish with fresh parsley before serving.
Notes:
This stew pairs well with crusty bread or rice.
