Ingredients:  

Main Ingredients

  • 1 kg Squid cleaned and cut into rings
  • 2 tbsp Olive Oil
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 400 g Tomatoes chopped
  • 1 cup White Wine
  • 1 tsp Paprika
  • 1 tsp Salt to taste
  • 1 tsp Black Pepper to taste
  • 1 cup Fish Stock
  • 2 tbsp Fresh Parsley chopped

Instructions: 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and cook until translucent.
  • Add the minced garlic and cook for another minute.
  • Add the chopped tomatoes and cook for 5 minutes.
  • Pour in the white wine and let it simmer for a few minutes.
  • Add the squid, paprika, salt, and black pepper. Stir well.
  • Pour in the fish stock, bring to a boil, then reduce heat and let it simmer for 30 minutes.
  • Garnish with fresh parsley before serving.

Notes:

This stew pairs well with crusty bread or rice.
