natural peanut butter

sweet potatoes, peeled and cubed

chickpeas, drained and rinsed

Instructions:
Heat the olive oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.
Add the garlic, red bell pepper, and ginger. Cook for another 2-3 minutes.
Stir in the cumin and coriander, cooking for 1 minute until fragrant.
Add the peanut butter, diced tomatoes, and vegetable broth. Stir until the peanut butter is fully incorporated.
Add the sweet potatoes and bring to a simmer. Cook until the sweet potatoes are tender, about 15 minutes.
Stir in the chickpeas and kale. Cook for another 5 minutes until the kale is wilted. Season with salt and pepper to taste.
Notes:
This stew is perfect for meal prep and tastes even better the next day.
