Ingredients:  

Main Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 tsp ginger, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 cup natural peanut butter
  • 1 can diced tomatoes (14.5 oz)
  • 4 cups vegetable broth
  • 2 cups sweet potatoes, peeled and cubed
  • 1 can chickpeas, drained and rinsed (15 oz)
  • 1 bunch kale, chopped
  • to taste salt and pepper

Instructions: 

  • Heat the olive oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.
  • Add the garlic, red bell pepper, and ginger. Cook for another 2-3 minutes.
  • Stir in the cumin and coriander, cooking for 1 minute until fragrant.
  • Add the peanut butter, diced tomatoes, and vegetable broth. Stir until the peanut butter is fully incorporated.
  • Add the sweet potatoes and bring to a simmer. Cook until the sweet potatoes are tender, about 15 minutes.
  • Stir in the chickpeas and kale. Cook for another 5 minutes until the kale is wilted. Season with salt and pepper to taste.

This stew is perfect for meal prep and tastes even better the next day.
