Ingredients:  

Main Ingredients

  • 2 lbs beef stew meat cut into cubes
  • 2 tbsp olive oil
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 2 large tomatoes chopped
  • 2 cups beef broth
  • 1 cup white wine
  • 2 large potatoes peeled and cubed
  • 2 large carrots sliced
  • 1 cup corn kernels
  • 1 cup dried apricots chopped
  • 1 cup raisins
  • to taste salt and pepper

Instructions: 

  • Heat the olive oil in a large pot over medium heat. Add the beef and cook until browned on all sides.
  • Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
  • Add the chopped tomatoes, beef broth, and white wine. Bring to a boil, then reduce heat and simmer for 1 hour.
  • Add the potatoes, carrots, corn, dried apricots, and raisins. Season with salt and pepper to taste. Simmer for another hour, or until the vegetables are tender.
  • Serve hot and enjoy your Carbonada Argentina Stew!
